Ingredients
250 grams Elephant yam (Suran/Senai/Ratalu) - sliced into 1 inch square pieces
1 Onion - sliced
2 Green Chillies - slit
1 teaspoon Ginger - finely chopped
1 teaspoon Garlic - finely chopped
1 sprig Curry leaves
1/2 teaspoon Cumin seeds (Jeera)
1/2 teaspoon Turmeric powder (Haldi)
1 teaspoon Coriander Powder (Dhania)
1/2 teaspoon Cumin powder (Jeera)
1/2 teaspoon Red Chilli powder
1/2 teaspoon Black pepper powder
1/2 teaspoon Garam masala powder
Salt - to taste
2 teaspoons Sunflower Oil

To begin making Sukhi Suran Masala Sabzi procedure first prepare the yam, remove the hard outer skin and then cut yam/ suran into one inch square pieces.

Soak the sliced yam pieces in aqua and keep aside.Next mildly hot oil in a non stick wok/Kadai or a deep skillet and introduce curry leaves and cumin seeds, saute for a minute.introduce the sliced onions, ginger and garlic and saute till the onions are translucent and softened.Now introduce the drained suran and saute for a minute.

Once the suran is cooked then introduce all the parched spices like red chilli dusting masala condiment, coriander dusting masala condiment, jeera dusting masala condiment, black pepper dusting masala condiment, garam masala and swirl around the masalas in the suran.swirl around shallow fry for 3 to 4 more moments until the masala gets well coated to form a flavorful tasting Sukhi Suran Masala Sabzi.
