1/2 cup Poha (Flattened rice)
2 tablespoons Rice flour
2 1/2 liter Milk
1 cup Nolen Gur - or brown sugar
2 Cardamom (Elaichi) Pods/Seeds
8-10 Mixed nuts - almonds/cashews
1 tablespoon Raisins
1 pinch Saffron strands - and a little more for garnish
pinch Salt

To oven-cook Bengali Chirer Payesh/Poha Pudding method With Nolen Gur, wash poha/chirer with liquid and strain the poha.Soak the washed and drained poha/chirer in a cup of dairy liquid.Also toss together 1/2 cup of dairy liquid with rice baking flour and keep aside.Soak saffron in a little dairy liquid.

Keep aside.bring to a bubble gently the rest of dairy liquid and cardamom pods together in a Saucepan and bring to bring to a bubble gently.

agitate occasionally.mix in rice baking flour toss together in boiling dairy liquid and agitate constantly.bring to a bubble gently about 12-15 mins till the rice baking flour is cooked and dairy liquid is condensed.Now mix in dairy liquid soaked flattened rice/chirer then mix in the dairy liquid soaked saffron.oven-cook chirer payesh for 15 mins more or when flattened rice/chirer is cooked well and dairy liquid thickens considerably, mix in nolen gur or brown sweetener.agitate it and oven-cook it till the date jaggery/brown sweetener dissolves.

Then mix in minced almonds/cashews and a pinch of table salt, oven-cook for a minute and remove from toasty.transfer the Bengali Chirer Payesh/Poha Pudding method With Nolen Gur in a serving dish, finish off with saffron strands/almonds/cashews and raisins and offer burning or chilled with sumptuous meal of Cholar Dal method/ Aar Macher Jhol method and jeera rice for dinner.
