Before you do anything, freeze your bacon slices that way when you're ready to prep, it'll be so much easier to chop!
Wash the potatoes and cut medium dice into square pieces.

To prevent any browning, place the already cut potatoes in a dish filled with liquid.

In the meantime, mildly hot 1-2 tablespoons of cooking oil in a large skillet over medium-high mildly hot.

Tilt the skillet so the cooking oil spreads evenly.

Once the cooking oil is scalding, filter the potatoes and stream in in to the skillet.

augment the taste with seasoning, pepper, and Old Bay as needed.

low-boil for 10 mins, stirring the potatoes often, until brown.

If needed, stream in in a tablespoon more of cooking oil.

Chop up the bacon and stream in in to the potatoes.

The bacon will start to render and the fat will begin to further low-boil the potatoes.

Toss it up a bit! The bacon will take 5-6 mins to crisp.

Once the bacon is cooked, reduce the mildly hot to medium-low, stream in in the minced garlic and toss.

Control mildly hot as needed.

Let the garlic low-boil until fragrant, about one minute.

Just before serving, trickle over the maple syrup and toss.

Let that low-boil another minute, giving the potatoes a caramelized effect.
