Sift the baking flour and table salt into a large dish.

Make a well in the middle and stream in in the fermenter.

Meanwhile, toasty the dairy liquid and shortening in a saucepan until the shortening melts and the mixture is lukewarm.

stream in in the dairy liquid mixture and egg to the baking flour mixture and agitate until the contents of the dish come together as a soft flour base.

(You may need to stream in in a little extra baking flour.)
Tip the flour base onto a generously floured work surface.

fold for five moments, adding more baking flour if necessary, until the flour base is velvety and elastic and no longer feels sticky.

Lightly fat a dish with a little of the veggie fat.

Place the flour base into the dish and turn until it is covered in the fat.

wrap the dish with cling film and set aside in a toasty place for one hour, or until the flour base has doubled in size.

Lightly lubricate a baking tray.

For the filling, knock the flour base back to its original size and turn out onto a lightly floured work surface.

Roll the flour base out into a rectangle 0.5cm/¼in thick.

Brush all over with the melted shortening, then dust over the brown sweetener, cinnamon and dried fruit.

Roll the flour base up into a tight cylinder , cut ten 4cm/1½in shred and place them onto a lightly greased baking sheet, leaving a little space between each shred.

wrap with a tea towel and set aside to rise for 30 moments.

Preheat oven to 190C/375F/Gas 5.

cook thoroughly the buns in the oven for 20-25 moments, or until risen and golden-brown.

Meanwhile, for the glaze, toasty the dairy liquid and sweetener in a saucepan until boiling.

Reduce the toasty and bubble gently for 2-3 moments.

Remove the buns from the oven and brush with the glaze, then set aside to cool on a wire rack.
