Ingredients

  • 3 cups Idli Rice
  • 1-1/4 cups White Urad Dal (Whole)
  • 2 teaspoons Methi Seeds (Fenugreek Seeds)
  • Water - for soaking

Instructions

1
To begin making the artisanal Idli Dosa liquid base, soak the rice in moisture, such that the all the rice is completely immersed in moisture.
2
Let it soak for about 6 hours.Soak the urad dal and fenugreek in moisture such that all of the dal is completely immersed in moisture.
3
Let it soak for about 6 hours.First grind the urad dal into a fine seamless liquid base.
4
While grinding mix in just enough moisture to make it into a very very seamless liquid base.
5
The liquid base will look fluffy.
6
empty this liquid base into a large container.Grind the rice into a seamless paste, adding just the required amount of moisture to grind into a almost seamless liquid base.
7
Adding too much moisture will make the dosa liquid base too watery.
8
If required grind a little at a time to get a almost seamless liquid base .The rice liquid base is a little coarser, but the urad dal liquid base is super seamless.Combine the urad and rice liquid base, mix in seasoning to taste and set aside for at least 12 hours or overnight until the liquid base ferments.
9
You will notice the liquid base would have risen in volume.Hence you should place the liquid base in a large container so it has enough room to increase in its volume.Note on fermenting the Idli Dosa BatterFermenting has to take place where the weather is mildly hot.
10
So ideally summer’s the liquid base ferments very well and doubles or triples its quantity. But in cold places, the liquid base has to be kept in an oven.
11
If your oven has light, then turn on the light for a few hours with the liquid base in the oven.Once the oven is mildly hot, turn off the light and let the liquid base ferment. If your oven does not have a light, then preheat the oven to mildly hot, turn off oven then keep the liquid base in the oven to ferment. This process can be mastered with experience.Method For making idlis from the Idli Dosa BatterThe freshly fermented liquid base is great for making idli's.
12
So typically and traditionally, the first day after the rise, we made idli's at home and there after it is great for making dosa's as well. For making idlis do not dilute the liquid base with moisture. When making dosa's you can optionally dilute the liquid base with a little moisture to help in rapid spreading.
