Ingredients
2 cups Mixed Sprouts
3 Potatoes (Aloo)
2 Onions
2 Green Chillies
1 inch Ginger - grated
2 cloves Garlic - grated
1 teaspoon Mustard seeds
1 teaspoon Cumin seeds (Jeera)
1 sprig Curry leaves
1 tablespoon Maharashtrian Goda Masala
1 teaspoon Turmeric powder (Haldi)
1 tablespoon Kashmiri Red Chilli Powder
1 teaspoon Coriander Powder (Dhania)
1 teaspoon Cumin powder (Jeera)
2 tablespoon Sunflower Oil
1 cup Tamarind Water
Salt - to taste
10 Pav buns
1 Onion - finely chopped
1/4 cup Sev
1 Lemon
1/3 cup Coriander (Dhania) Leaves - finely chopped
Instructions

To begin making the Maharashtrian Misal Pav formula, rinse the sprouts well.

Into a pressure cooker, mix in the sprouts, potatoes, red chili dusting masala condiment, table salt and turmeric dusting masala condiment along with 1/4 cup of liquid and pressure prepare for 3 whistles.

After 3 whistles, turn the toasty to low and bubble gently for 3 moments and turn off the toasty.Open the cooker only then the pressure has released completely.toasty fat in a wok.

mix in mustard seeds and cumin seeds and allow it to crackle. mix in the cut up onions, ginger, garlic and green chilies and curry leaves and saute until onions turn soft and the raw smell goes away.mix in remaining masala condiment powders, turmeric dusting masala condiment, kashmiri red chili dusting masala condiment, coriander dusting masala condiment, goda masala, roasted cumin dusting masala condiment and swirl around sauté for about 10 seconds.mix in the cooked sprouts and potato mixture to the above masala condiment mixture.

Mash all the components either with the back of the spoon or using a potato masher.

The mixture will not be completely seamless but a little chunky here and there.

Keep the toasty on medium and continue to prepare the Misal Pav along with the spices for a few moments.After a few moments, mix in the tamarind liquid and bring it to heat to boiling point.

Reduce toasty to low and bubble gently for 10 moments on low toasty.

Check the table salt and spices and adjust to suit your essence of the formula.Once done, turn off the toasty and swirl around in the cut up coriander leaves and transfer to a serving container.
