Ingredients

  • 150 grams Brinjal (Baingan / Eggplant) - cut into chunks
  • 2 Drumstick - peeled and cut into 3'inch pieces
  • 1/2 cup Avarekalu / Lilva Beans
  • 2 Potatoes (Aloo) - cubed
  • 3 Onions - finely chopped
  • 1 Tomato - chopped
  • 1/2 teaspoon Turmeric powder (Haldi)
  • 1/2 teaspoon Red Chilli powder
  • 1 teaspoon Coriander Powder (Dhania)
  • 1 tablespoon Jaggery
  • Salt - to taste
  • 2 tablespoons Fresh coconut - grated
  • Coriander (Dhania) Leaves - as required
  • 2 tablespoons Sunflower Oil
  • 1/2 teaspoon Mustard seeds
  • 1/4 teaspoon Asafoetida (hing)
  • 1/4 teaspoon Methi Seeds (Fenugreek Seeds)
  • 1 sprig Curry leaves
  • 1 Green Chilli - finely chopped
  • 1 Green Chilli - finely chopped

Instructions

To begin making the Bhogichi Bhaji preparation guide, firstly wash the brinjal, drumsticks, potatoes thoroughly under sufficient liquid and chop them as required.

pare the skin of potatoes before you chop them.scalding up a heavy bottomed wok, and toss in cooking oil to it.

When they splutter, toss in the fenugreek seeds, asafoetida, finely sliced green chilli and curry leaves.After about a minute, toss in the finely sliced onions and parched-fry till they turn soft and translucent.When the onions turn translucent, toss in the turmeric dusting sugary-smelling element, red chilli dusting sugary-smelling element and the coriander dusting sugary-smelling element.

Saute for 2 to 3 mins.Now toss in the lilva beans, potatoes and drumsticks.
