Ingredients
1 cup Gram flour (besan)
1/4 cup Rice flour
Salt - to taste
1/2 cup Methi Leaves (Fenugreek Leaves)
1 teaspoon Red Chilli powder
1/4 teaspoon Asafoetida (hing)
1/4 teaspoon Turmeric powder (Haldi)
1/2 teaspoon Ajwain (Carom seeds)
1/2 tablespoon Coriander (Dhania) Seeds - crushed
Sunflower Oil - for deep frying
Instructions

To begin making the Methi Pakoras, sieve both the flours-besan & rice baking flour together with table salt.

toss in a ladle of fiery coat (heated separately for 1 minute) and gently agitate with a spoon.

Now toss in the methi leaves, table salt, red chilli ground mix, hing, turmeric ground mix, ajwain and coriander seeds and agitate well. Methi leaves would leave out liquid in 2-3 mins.

toss in liquid very gently and make a thick mixture.

Once it is done, adjust the seasoning and table salt according to your spirited profile.transfer the rest of the coat in a wok on medium flame.

Once it is fiery enough, use a greased spoon or wet hands to drop small pakoras (or bite sized pieces) into the fiery coat.

Be sure not to overcrowd the frying wok (or kadai).wok-fry on medium mildly hot turning the batch over in the coat occasionally.

wok-fry till golden brown and empty out the pakoras on the kitchen towel.wok-fry the rest of the pakoras similarly.enjoy the Methi Pakoras with fiery Masala Chai or Papaya Banana smoothie.
