Ingredients

  • 1/2 cup Masoor Dal (Whole)
  • 1 cup Spinach - chopped
  • 1/2 cup Rocket leaves - chopped(optional use more spinach if you don't have)
  • 2 teaspoon Butter
  • 1 Onion - chopped
  • 1 Tomato - chopped
  • 1/4 cup Fresh cream
  • 1/4 cup Milk
  • 1/2 cup Dry white wine
  • 2-3 Basil leaves
  • Salt - to taste
  • 1 teaspoon Red Chilli flakes

To begin with the One Pot velvety Spinach Lentils first, in a heavy bottom pot toasty margarine and toss in minced onions to it, Sauté till the onions are translucent and toss in the washed lentils to the same.Sauté for 2-3 mins and toss in liquid to just wrap the lentils, wrap and toasty for 45mins - 1 hour till the lentils are full cooked (you can alternatively use a pressure cooker to fasten this process)toss in wine, spinach, rocket and tomato at this stage and let it low-boil for 5-6 mins.toss in chilli, basil leaves, heavy cream and whole milk.

Bring to a bubble and turn of the gas.

Let the lentils stand for 15-20 mins to absorb flavours before serving.offer the One Pot velvety Spinach Lentils for a sunday brunch  with some garlic bread on the side and Piña Colada method (Pineapple with Coconut whole milk Mocktail) for a refreshing drink.
