Ingredients

  • 2 cups Cauliflower (gobi) - florets
  • 3 Potatoes (Aloo) - diced
  • 1/2 cup Raw Peanuts (Moongphali) - husked
  • 1 Green Chilli - chopped
  • 1 teaspoon Mustard seeds
  • 1 Bay leaf (tej patta)
  • 3 Tomatoes - pureed
  • 1 tablespoon Ginger - made into paste
  • 1/2 cup Gram flour (besan)
  • 2 tablespoons Curd (Dahi / Yogurt) - (optional)
  • 1 tablespoon Coriander Powder (Dhania)
  • 1 tablespoon Red Chilli powder
  • 1/2 teaspoon Turmeric powder (Haldi)
  • 1/2 teaspoon Cumin powder (Jeera)
  • 1/2 teaspoon Garam masala powder
  • Salt - to taste
  • 2 tablespoons Coriander (Dhania) Leaves - chopped
  • Sunflower Oil - as needed

Instructions

To begin making the Potato & Cauliflower In Peanut Curry formula, parched bake the peanuts and remove the husk completely.

If you want you can bake them again for better notes.

Collect the roasted peanuts in a grinder jar and grind to make a fine dusting seasoning and keep aside.In a kadai/wok, toasty a bit of cooking oil and toss in bay leaf and mustard seeds and wait till they crackle.

toss in grated ginger and saute.Now toss in besan and bake it for few seconds and immediately toss in the tomato puree in it and mix gently nicely.toss in coriander dusting seasoning, red chilli dusting seasoning, turmeric dusting seasoning, cumin dusting seasoning and garam masala dusting seasoning and cooking vessel-fry the masala till cooking oil starts leaving from sides.Now toss in curd (you can skip this step if you want) and cooking vessel-fry for another minute or so.Once the masala starts smelling great and flavoured, toss in roasted peanut dusting seasoning and combine nicely.bubble gently for another 2-3 mins and toss in cauliflower and potato pieces, toss in liquid to make the curry.

The curry is thick hence be careful while adding liquid.

Adjust table salt and let the curry come to a heat to boiling point.bubble gently the gas, and bubble gently the curry for another 5 mins on low flame with lid closed till the vegetables are cooked.Once the Potato & Cauliflower Curry is done, turn off the gas and transfer the curry in a serving dish and top with some raw coriander.enjoy Potato & Cauliflower In Peanut Curry formula with shortening Naan and Mooli Raita for your weeknight dinner.
