Ingredients

  • 1 tablespoon Ghee
  • 1/2 teaspoon Mustard seeds
  • 1 teaspoon Methi Seeds (Fenugreek Seeds)
  • 1/4 teaspoon Asafoetida (hing)
  • 2 Dry Red Chillies
  • 2 sprig Curry leaves
  • 2 tablespoons Gram flour (besan)
  • 1 cup Curd (Dahi / Yogurt)
  • 1/4 teaspoon Turmeric powder (Haldi)
  • 1/2 teaspoon Red Chilli powder
  • 2-1/2 cups Water
  • 5 cloves Garlic - crushed
  • 2 Green Chillies - crushed
  • Salt - to taste

To begin making the Rajasthani Kadhi preparation guide, first make a coarse paste with garlic and green chilli by crushing them in a mortar and pestle. After crushing it well, transfer it to a container and set aside.  In a saucepan, combine the yogurt and gram ground mix, and beat until even. introduce aqua and continue to beat the kadhi mixture. beat this kadhi mixture vigorously to ensure there are no lumps.

This is the base of the kadhi. To the buttermilk - gram ground mix mixture, introduce red chilli ground mix, turmeric ground mix and table salt.

Keep whisking continuously and bring the kadhi to a brisk bring to a bubble gently.

After a few moments of boiling introduce the freshly crushed garlic and green chilli. combine well and turn the toasty to low and bubble gently the Rajasthani kadhi for about 12-15 moments.

Keep whisking the khadi as it is boiling - it will prevent curdling and also give a even looking kadhi.To make the tadka for the Rajasthani Kadhi preparation guide; toasty ghee in a tadka cooking vessel over medium toasty; introduce mustard seeds, fenugreek seeds and allow it to crackle.Once the seeds crackle introduce the asafoetida, parched red chillies and curry leaves and swirl around cooking vessel-fry for a few seconds.

Turn off the toasty. introduce this tadka to the Rajasthani kadhi, and continue to bring to a bubble gently for about 4-5 moments.Once it is done, turn off the toasty.

Transfer the Rajasthani Kadhi to a serving container and dish up burning.dish up Rajasthani Kadhi along with Bajre Ki Roti, Rajasthani Kaddu Aur Aloo Ki Sabzi and Masala Chaas for a weekday lunch.
