8 Sardines
2 tbs Olive Oil
3 cloves Garlic
1 tbs Paprika
1/2 Lemon
4 sprigs Rosemary
1 Red Chilli

Put all of the fixings, except the sardines, into a mixing bowl and combine together with some seasoning.

transfer into a baking dish, mix in the sardines and toss really well.

seal and ice for a few hours.

bring to temperature a BBQ or griddle pot until scalding.

char the sardines for 4-5 mins on each side or until really caramelised and charred.

Put onto a serving plate, trickle with fat, dust with a little more paprika and squeeze over the lemon wedges.
