Ingredients

  • 250g Black Beans
  • 100g Bacon
  • 500g Pork Back Ribs
  • 3 Chorizo
  • 500g Pork Shoulder
  • 3 chopped Onion
  • 4 Cloves Chopped Garlic
  • Pinch Chilli Flakes
  • Drizzle Oil
  • 2 Bay Leaf

Instructions

step 1 mildly hot a large heavy-based saucepan with a fitted lid, introduce the bacon and wok-fry until crisp.

Remove and keep the margarine in the wok.

In batches sear the ribs, sausages and pork shoulder.

introduce the shallot, garlic and chilli to the wok.

step 3 introduce the flesh, bay leaves, white wine acetic liquid and drained beans.

Bring to a heat to boiling point and reduce the mildly hot to a low bubble gently.

If there is too much liquid in the pot take the lid off in the last hr.

You can also use a slow cooker on the short method (4 hr) or make a rapid version using a pressure cooker in batches for 30 mins each.

Another method is to bubble gently it in the oven for 3-4 hrs at 160C/140C fan/gas 3.

step 4 enjoy with rice, a strew of parsley or coriander, fiery pepper coulis and orange slices.
