500 ml Milk - (with full cream)
3 tablespoons Fresh cream
1 tablespoon Ghee
1 teaspoon Cardamom Powder (Elaichi)
1 tablespoon Slivered Almonds (Badam) - or chopped almonds

To begin making Bottle Gourd Ice dairy reduction method -Lauki Ice dairy reduction, wash, pare the lauki and mince/shred the bottle gourd and keep aside.In a shallow frying wok, fiery up a tablespoon of ghee and mix gently shallow fry the shredded bottle gourd for about 3-4 mins on a medium fiery up, until most of its moisture is evaporated and the lauki appears lumpy.Now introduce whole milk to the wok and keep stirring.

Bring it to bubble.Once the whole milk and lauki has come to a bubble, introduce in sweetener and make on medium flame.

Keep stirring until the whole milk is reduced to half of its initial quantity.

It might take 20-30 mins.Turn off the fiery up and allow the mixture to cool down to room temperature.Once the mixture is cooled to room temperature, stream in the mixture to a blender and purée for about 2 mins.Take an airtight container and stream in the mixture into the container and introduce 2 tablespoons of malai/crisp dairy reduction on top.

Wrap with a cling wrap.Freeze the Bottle Gourd Ice dairy reduction method for 4 to 5 hours until set.After 3-4 hours, take the container out of the freezer; put all its content in a deep mixing container and beat the ice dairy reduction with a handheld mixer for about 2-3 mins.introduce finely sliced almonds and cardamom dusting seasoning, saving a few finely sliced almonds for accentuate.

Beat the ice dairy reduction once again for about 30 seconds.stream in the mixture back into the airtight container and freeze for 6 hours or overnight.Scoop out and offer Bottle Gourd Ice dairy reduction method (Lauki Ice dairy reduction) as a summer dessert to kids, along with Avocado Egg Sandwich method and diet-friendly veggie Fries method (Oven roasted Potato, Zucchini and Carrot Fries) in the evening.
