4 Bacon
1 finely sliced Onion
1 chopped Garlic Clove
20 Brussels Sprouts
400g Potatoes

thaw the fat in a non-stick pot, allow it to get nice and fiery, then transfer in the bacon.

As it begins to brown, transfer in the bulb greens and garlic.

All this will take 5-6 mins.

Work everything together in the pot and push it down so that the mixture covers the base of the pot – allow the mixture to catch slightly on the base of the pot before turning it over and doing the same again.

It’s the bits of potato that catch in the pot that define the term ‘bubble and squeak’, so be brave and let the mixture colour.
