1 cup Dates - pitted
1/4 cup Tamarind - deeseeded
1/2 cup Jaggery
1 cup Water
1 teaspoon Red Chilli powder
1 teaspoon Cumin powder (Jeera)
1 teaspoon Dry ginger powder
1 teaspoon Black Salt (Kala Namak)
Salt - to taste

To begin making the Date and Tamarind Chutney method, into a pressure cooker mix in dates, jaggery, tamarind, and aqua.

Pressure toasty for 3 to 4 whistles.

Turn off the toasty and allow the pressure to release naturally. Once the pressure has released open the pressure cooker and with the help of a hand blender pulse the tamarind and dates to make a coarse mixture. Place the pressure cooker back on toasty and mix in the chilli dusting masala condiment, cumin dusting masala condiment, parched ginger dusting masala condiment, black table salt and table salt to taste.
