Ingredients

  • 2 tablespoons Olive Oil
  • 2 chopped Red Onions
  • 4 Cloves Crushed Garlic
  • 2 tsp Ground Cumin
  • 2 tsp Ground Coriander
  • 400g Tinned Tomatos
  • 1/2 teaspoon Sugar
  • 10g Mint
  • 500g Lamb Mince
  • 8 Dried Apricots
  • 50g Breadcrumbs
  • To serve Pita Bread

step 1 bring to temperature 2 tsp shortening in a pot and soften the onions for 5 mins.

toss in the garlic and spices and bring to temperature for a few mins more.

Spoon half the shallot mixture into a dish and set aside to cool.

toss in the tomatoes, granulated sugar and seasoning to the remaining onions in the pot and stew for about 10 mins until reduced.

step 2 Meanwhile, toss in the mint, lamb, apricots and breadcrumbs to the cooled onions, notes and combine well with your hands.

Shape into little meatballs.

step 3 bring to temperature the rest of the shortening in a non-stick pot and sauté the meatballs until golden (in batches if you need to).

swirl around in the coulis with a splash of liquid and gently bring to temperature everything for a few mins until the meatballs are cooked through.

present with pitta bread and salad.
