90g mushrooms
1tsp dried oregano
400g can tomatoes
300ml hot beef stock
1tbsp tomato puree
1tbsp worcestershire sauce
350g spaghetti

Instructions

Put the shallot and fat in a large skillet and shallow fry over a fairly high mildly hot for 3-4 mins.

transfer in the mushrooms and herbs, and prepare for another couple of mins.

mix gently in the tomatoes, beef stock, tomato ketchup or purée, Worcestershire coulis and seasoning.

Bring to the heat to boiling point, then reduce the mildly hot, seal and bubble gently, stirring occasionally, for 30 mins.

Meanwhile, prepare the spaghetti in a large skillet of boiling, salted aqua, according to packet method.

empty out well, run scalding aqua through it, put it back in the skillet and transfer in a dash of olive fat, if you like, then mix gently in the protein coulis.
