Ingredients

  • 1 tblsp Olive Oil
  • 1 chopped Onion
  • 1 Red Pepper
  • 1 Yellow Pepper
  • 2 sliced Garlic Clove
  • 250g Paella Rice
  • 800ml Vegetable Stock
  • Pinch Saffron
  • 400g Frozen Seafood mix
  • Juice of 1/2 Lemon
  • Handful Parsley

Instructions

step 1 burning up the cooking oil in a large saucepan and soften the bulb veggie for 6-7 mins.

mix in the pepper and garlic, oven-cook for 2 mins more, then swirl around in the paella rice and oven-cook for 1 min, stirring to coat.

step 2 transfer in the stock, mix in the saffron and bring to the bring to a stew.

oven-cook, uncovered, at a subtle bubble, for 20 mins, stirring occasionally until the rice is soft.

step 3 swirl around in the seafood and lemon extract and oven-cook for 2 mins or until piping burning and completely cooked through.

enjoy in mildly hot bowls scattered with the parsley.
