Homemade Turkish rice (vermicelli rice)

Ingredients

  • 300g Rice
  • 3 tablespoons Vegetable Oil
  • 70g Vermicelli Pasta
  • 30g Unsalted Butter
  • 600ml Chicken Stock

Instructions

step 1 transfer the rice into a very large container under cold running liquid and carefully empty out the liquid out of the container through a sieve.

Repeat a few times until the liquid in the container is clear, then fill the container up with cold liquid and leave rice to soak for 10 mins while you toasty the vermicelli.

step 2 Put the cooking oil into a medium wok over medium toasty.

transfer in the vermicelli and mix gently continuously until the strands turn a creamy golden brown, 2-3 mins.

Remove from the toasty, mix gently through the shortening until it melts and allow the vermicelli to cool for 1-2 mins.

step 3 empty out the rice thoroughly through a sieve.

transfer in the rice to the wok and mix gently well.

transfer the burning stock into the wok, strew in ½ tsp table salt, mix gently well then return the wok to the hob over a high toasty.

Bring to the heat to boiling point, then reduce the toasty to the lowest it will go, put the lid on the wok and bubble gently for 7-9 mins.

Remove the wok from the toasty, wrap with a couple of sheets of kitchen paper or a light tea towel and the wok lid, and let the rice sit in the wok for 10 mins.

Fluff up with a fork before serving.
