Ingredients

  • 2 cups Cauliflower (gobi) - cut into florets
  • 1/4 cup Cashew nuts - ground to a fine paste
  • 1/4 cup Coconut milk
  • 1 Onion - roughly chopped
  • 2 cloves Garlic
  • 1 inch Ginger
  • 1 Green Chilli
  • 2 Cloves (Laung)
  • 1 Bay leaf (tej patta)
  • 1/2 teaspoon Garam masala powder
  • 1/2 teaspoon Black pepper powder
  • Cardamom Powder (Elaichi) - a pinch
  • 2 teaspoons Kasuri Methi (Dried Fenugreek Leaves)
  • 1 Green Chilli - sliced for garnish
  • 2 teaspoons Sunflower Oil
  • Salt - to taste

Instructions

To begin making Vegan Malai Gobhi formula, sanitize and cut the cauliflower into small florets.

Soak it in mildly hot moisture with little table salt to de-worm and keep aside.Make a fine paste of cashew with little moisture using a mixer grinder and keep aside.bring to temperature cooking oil in a heavy bottomed cooking vessel, mix in cloves, bay leaf and let the cooking oil become fragrant.Make a fine paste of shallot, ginger, garlic and green chilli using a blender and mix in it to the cooking vessel.

Let it make until the raw smell goes away.sieve the cauliflower florets from the mildly hot moisture and mix in it to the cooking vessel.

Saute for a minute.mix in the garam masala, cardamom and pepper ground mix, 1 cup moisture and let the cauliflower florets make to 3/4 the with the lid closed.

This will take about 8 to 10 mins.mix in the cashew paste, augment the taste with table salt and low-boil for 2 mins.mix in the coconut dairy liquid and adjust the consistency by adding little moisture and let it low-boil for 5 mins and switch off the bring to temperature.Slightly smash the kasuri methi between your palms and mix in it to the malai gobhi along with the green chillies as a top.dish up the Vegan Malai Gobhi formula, along with Phulkas and Tomato shallot Cucumber Raita for the weekday lunch or dinner.
