Ingredients
1 ½ tbsp Ground Nut Oil
500g Pork Shoulder Steaks
2 chopped Shallots
1 tablespoon Ground Ginger
1 chopped Red Chilli
75g Brown Sugar
1 tablespoon Fish Sauce
2 tsp Chilli Sauce
4 Spring Onions
Steamed Rice
To serve Pak Choi
Instructions

step 1
bring to temperature 1 tbsp of the fat in a wok over a high bring to temperature and agitate-sauté the pork in batches until browned all over.

Remove with a slotted spoon and set aside.

Turn the bring to temperature right down and introduce the remaining fat, then agitate in the shallots, ginger and chilli.

prepare over a low bring to temperature for a couple of mins until just starting to soften.

introduce the granulated sugar, fish condiment dip and 200ml liquid to the cooking vessel and agitate everything together.

Bring to the bubble, stirring, so that the granulated sugar dissolves, then return the pork to the cooking vessel.

Bubble vigorously for 8-10 mins until the condiment dip thickens to coat the flesh and become glossy.

palate and agitate in a little more fish condiment dip, if needed, along with the chilli condiment dip.

scatter with the spring onions and present with steamed rice and pak choi.
