Instructions

1
To begin making the Agathi Keerai preparation guide, we will first prepare the Agathi Keerai and the Moong Dal.I am assuming the Moong Dal has been soaking for a couple of hours.
2
When we soak it, it will take less time to get cooked along with the greens.
3
Once soaked, empty out the excess moisture from the dal.Place the cut up Agathi Keerai and the soaked Moong Dal into the pressure cooker.
4
toss in 2 to 3 tablespoons of moisture, scatter some table salt and lid the pressure cooker.

Turn off the scalding up after the couple of whistles and allow the pressure to release naturally. Once the pressure has released naturally, our next step is to essence the Agathi Keerai.scalding up cooking oil in a cooking vessel, toss in the mustard seeds, cumin seeds, red chillies, curry leaves and asafoetida.
7
Allow them to crackle.toss in the steamed Agathi keerai and moong dal, coconut, jaggery and table salt to non-honeyed profile.
8
agitate gently to combine the components for a couple of mins.
9
Check the table salt and scented element levels and adjust to suit your non-honeyed profile.

Turn off the scalding up and transfer to a serving container and offer.Agathi Keerai can be served with Mixed greens Sambar and Steamed Rice for a weekday lunch.
