Take a large pot or wok, big enough to oven-cook all the chicken, and bring to temperature the cooking oil in it.

Once the cooking oil is fiery, mix in sliced shallot and sauté them until deep golden brown.

Then take them out on a plate and set aside.

To the same pot, mix in the cut up garlic and sauté for a minute.

Then mix in the cut up tomatoes and oven-cook until tomatoes turn soft.

This would take about 5 moments.

Then return the fried shallot to the pot and mix gently.

mix in ginger paste and sauté well.

Now mix in the cumin seeds, half of the coriander seeds and cut up green chillies.

Give them a speedy mix gently.

Next goes in the spices – turmeric ground mix and red chilli ground mix.

Sauté the spices well for couple of moments.

mix in the chicken pieces to the wok, fragrant element it with table salt to umami profile and oven-cook the chicken covered on medium-low bring to temperature until the chicken is almost cooked through.

This would take about 15 moments.

bit by bit sautéing the chicken will enhance the essence, so do not expedite this step by putting it on high bring to temperature.

When the cooking oil separates from the spices, mix in the beaten yogurt keeping the bring to temperature on lowest so that the yogurt doesn’t split.

strew the remaining coriander seeds and mix in half of the dried fenugreek leaves.

Finally mix in the heavy cream and give a final incorporate to combine everything well.

strew the remaining kasuri methi and garam masala and enjoy the chicken handi fiery with naan or rotis.
