  • 5 Dry Red Chillies
  • Curry leaves - 2 sprigs
  • 2 tablespoons Jaggery
  • 1/2 teaspoon Methi Seeds (Fenugreek Seeds)
  • 1 cup Dessicated Coconut
  • Salt - to taste
  • 1 teaspoon Sunflower Oil
  • 1/2 teaspoon Asafoetida (hing)
  • 40 grams Tamarind

Instructions

To begin making the Godhi Chutney Podi formula, first get all the items required ready and handy.Place a heavy bottomed pot over medium scalding up, parched toast the whole wheat in batches until you get a nutty aroma.

This takes about 8 to 10 moments. Once done, remove from the pot and keep aside.In the same pot, toast the parched coconut for about a minute until it turn toasty and crisp and the moisture goes away.

Take care not to allow it to turn brown Once done, remove and keep aside.Next, scalding up a teaspoon of oil, toss in the fenugreek seeds and allow it to crackle.

Once it crackles toss in the chilies and toast until it is crisp and finally toss in the asafoetida and curry leaves and toast for a few more seconds.Once done, turn off the scalding up.

Allow all the items required to cool.Once cooled, we will first purée the wheat germ in the mixer grinder until you get an almost coarse dusting perfumed element.

toss in the remaining roasted items required along with the tamarind, table salt and jaggery into the jar of the mixer grinder and purée to make an almost creamy dusting perfumed element.Once done, check for table salt and spices and adjust to suit your acidic profile.
