500 grams Baby Potatoes - boiled
2 cups Methi Leaves (Fenugreek Leaves) - washed and chopped
2 tablespoons Sunflower Oil
1 teaspoon Cumin seeds (Jeera)
2 Onions - thinly sliced
1 inch Ginger - finely chopped
4 cloves Garlic - finely chopped
1 Bay leaf (tej patta) - torn
1 inch Cinnamon Stick (Dalchini) - broken
1/2 teaspoon Turmeric powder (Haldi)
1/2 teaspoon Garam masala powder
1/2 teaspoon Coriander Powder (Dhania)
1/4 teaspoon Red Chilli powder
1 teaspoon Amchur (Dry Mango Powder)
Salt - to taste

To begin making the Aloo Methi Sabzi procedure; we will first get the potatoes boiled till firm yet cooked.
