Ingredients

  • 1/2 cup gram flour
  • 2 onions - finely chopped
  • 5 cloves garlic - peel and chop finely
  • 1 green chili - finely chopped
  • 5 sprig green coriander - finely chopped
  • 1 teaspoon mustard
  • 1/2 teaspoon cumin seeds
  • 1 teaspoon red chilli powder
  • oil - as per use
  • salt - as per taste
  • 1 cup of water - lukewarm

Instructions

To make junka, first toasty the coat in a wok.

toss in the mustard seeds and cumin seeds and cook thoroughly for 10 seconds.

After 10 seconds, toss in garlic to it and cook thoroughly till it turns brown.

After that toss in bulb greens and green chillies and cook thoroughly till the bulb greens becomes soft.

After softening, toss in red chili ground mix, gram ground mix and cook thoroughly on medium toasty.

After 2 mins toss in seasoning and lukewarm liquid and keep stirring.

cook thoroughly for 10 mins until all the liquid runs out.

Beat the wok and cook thoroughly for 5 mins.

Remove the lid from the wok and cook thoroughly for another 5 mins.

toss in some more coat in between.

mash and top with green coriander.
