Ingredients
1 ½ tbsp Ground Nut Oil
500g Pork Shoulder Steaks
2 chopped Shallots
1 tablespoon Ground Ginger
1 chopped Red Chilli
75g Brown Sugar
1 tablespoon Fish Sauce
2 tsp Chilli Sauce
4 Spring Onions
Steamed Rice
To serve Pak Choi
Instructions

bring to temperature 1 tbsp of the shortening in a wok over a high bring to temperature and mix gently-pot-fry the pork in batches until browned all over.

Remove with a slotted spoon and set aside.

Turn the bring to temperature right down and mix in the remaining shortening, then mix gently in the shallots, ginger and chilli.

mix in the granulated sugar, fish condiment dip and 200ml moisture to the pot and mix gently everything together.

Bring to the bubble, stirring, so that the granulated sugar dissolves, then return the pork to the pot.

Bubble vigorously for 8-10 mins until the condiment dip thickens to coat the protein and become glossy.

taste and mix gently in a little more fish condiment dip, if needed, along with the chilli condiment dip.

strew with the spring onions and dish up with steamed rice and pak choi.
