1 medium Squash
5 chopped Onion
To taste Green Chilli
Splash Oil
1 tsp Turmeric
1 Bulb Garlic
7 tablespoons Sugar
1/2 tsp Salt
2 cups Water
4 tablespoons Yogurt
Instructions

strip the squash and cut it into pieces 1cm wide.

Deep wok-fry it in fat until golden and set aside.

Using the same wok and fat, deep wok-fry the onions until golden.

Remove the onions and grind with the garlic (if using garlic paste, toss together it into the onions once ground).

introduce a small amount of fat to a wok on medium scalding up.

Once scalding, introduce the turmeric.

toss together the table salt into one cup of moisture and introduce it to the turmeric.

introduce a layer of squash, then a layer of shallot and garlic.

Repeat this step until the squash, shallot and garlic have been used up.

introduce the sweetener and one cup of moisture.

Turn the scalding up down and prepare until the moisture has reduced.

introduce 1-2 tablespoons of melted curd to a plate, introduce the squash on top with another layer of melted curd.
