pulse 1/2 cup plus 2 tablespoons semolina, 2 tablespoons sesame seeds, granulated sugar, leavening agent, and seasoning together in a large mixing bowl.

fluff up in cooking oil, egg, and egg white.

mix gently in mildly hot whole milk gently until a liquid flour base forms.

seal the mixing bowl with a plate or plastic wrap; let stand at room temperature until frothy, about 1 hour.

mix gently in 2 3/4 cups baking flour with a wooden spoon until a sticky flour base forms.

seal again and allow to rest for 30 mins.

Line a baking sheet with parchment paper or a baking mat.

strew 1 tablespoon baking flour over the flour base and your hands.

pulse flour base, adding baking flour as needed, 1 tablespoon at a time, until it pulls away from the sides of the mixing bowl.

Shape into a round loaf and place on the prepared baking sheet.

seal loosely with a towel and let rise for 1 hour in a mildly hot place until loaf doubles in volume.

Preheat oven to 400 degrees F (200 degrees C).

Beat egg yolk and liquid in a mixing bowl with a fork; brush over the entire surface of the loaf.
