Ingredients

  • 1 cup Sooji (Semolina/ Rava)
  • 1 Onion - finely chopped
  • 1 Green Chilli - finely chopped
  • 1 teaspoon Mustard seeds
  • 1 teaspoon Black Urad Dal (Split)
  • 1 sprig Curry leaves
  • Salt - as required
  • 1 teaspoon Sugar
  • 3 cups Hot water
  • 1 teaspoon Lemon juice
  • 6 sprig Coriander (Dhania) Leaves - finely chopped
  • 1 inch Ginger - chopped
  • Green Chilli - chopped

Instructions

To begin making the Kothamalli Rava Upma method, first grind the coriander leaves for the upma.Into the mixer mix in coriander leaves, green chillies, ginger and grind into a creamy paste.

mix in a little aqua to grind to a creamy paste.

This is the kothamalli paste. In a wok burning up 3 cups of aqua in a saucepan along with seasoning and granulated sugar.

Bring it to a heat to boiling point and swirl around until the granulated sugar dissolves.

Turn the burning up to low and keep the aqua simmering.burning up lubricate in a heavy bottomed wok.

mix in the mustard seeds, urad dal and allow it to bake until the urad dal is browned.

mix in in the curry leaves, onions, green chillies and prepare till the onions become soft and translucent.Once the onions have softened, mix in the sooji and bake for 3 to 4 mins until you get a lightly roasted aroma.

Gradually mix in the burning aqua and keep stirring the kothamalli upma until all the aqua is absorbed.
