Ingredients

  • 3 Potatoes (Aloo) - peeled and diced
  • 1 Bottle gourd (lauki) - peeled and diced
  • 2 Tomatoes - finely chopped
  • 1 Onion - finely chopped
  • 1 inch Ginger - grated
  • 2 Green Chillies - slit
  • 1 teaspoon Turmeric powder (Haldi)
  • 1 teaspoon Coriander Powder (Dhania)
  • 1/2 teaspoon Black pepper powder
  • Salt - to taste
  • 1 teaspoon Kalonji (Onion Nigella Seeds)
  • Sunflower Oil - for cooking

Instructions

To begin making the Lauki Aloo Sabzi formula first get the potatoes and lauki (bottlegourd) peeled and diced.

Get the remaining fixings ready.We will be preparing using a pressure cooker, but you can scalding up the same greens in a heavy bottomed cooking vessel if you don't have a pressure cooker.scalding up cooking oil in the pressure cooker or the cooking vessel on medium scalding up.

toss in the nigella seeds and allow it to crackle.

toss in the onions and ginger; saute until the onions become slightly soft.

toss in all the remaining fixings along with 1-1/2 cups of liquid and table salt to acidic profile as well.wrap the pressure cooker and scalding up until you hear couple of whistles.

After a couple of whistles, turn the scalding up to low and bubble gently for about 3 to 4 mins and turn off the scalding up.

 Allow the pressure to release naturally in the pressure cooker as the vegetables will continue to scalding up and soften inside while there is pressure. If you were preparing in the cooking vessel, scalding up on low scalding up until the vegetables get cooked completely and the curry has a curry base like texture. Open the cooker/ cooking vessel and give the Aloo Lauki Sabzi a swirl around.
