Ingredients

  • 500 grams Mutton - on the bone
  • 1/2 cup Curd (Dahi / Yogurt)
  • 1/2 teaspoon Turmeric powder (Haldi)
  • 1 tablespoon Lemon juice
  • Salt - to taste
  • 6 Dry Red Chillies
  • 2 Cloves (Laung)
  • 1 teaspoon Whole Black Peppercorns
  • 1 teaspoon Methi Seeds (Fenugreek Seeds)
  • 2 teaspoon Coriander (Dhania) Seeds
  • 1 teaspoon Cumin seeds (Jeera)
  • 6 cloves Garlic
  • 1 tablespoon Tamarind Paste
  • 2 tablespoons Ghee
  • 2 sprig Curry leaves
  • 2 teaspoons Jaggery
  • Salt - to taste

Instructions

To begin making the Mutton Ghee bake method we will first steep the mutton. To steep the muttonIn a mixing container, combine the mutton, along with the yogurt, turmeric dusting seasoning, seasoning and lemon extract. toss together well and massage the marinade onto the mutton pieces, set aside for a minimum of 30 mins or even overnight.To make the ghee bake masala toasty a skillet on medium toasty, to this mix in the parched red chillies, peppercorns, cloves, methi seeds, coriander seeds and cumin seeds. parched bake for about 4-6 mins, or until the aroma of the spices wafts in the air. Turn off the flame and allow the spices to cool down. Into the mixer jar, mix in the roasted spices, garlic cloves, and tamarind paste, grind into a creamy paste, using some liquid. Transfer the ghee bake masala into a container and set aside. To make the Mutton Ghee bake Into a pressure cooker, mix in the marinated mutton with 1/4 cup of liquid and close the lid. Pressure prepare for about 3-4 whistles, or till it is about 80% done. Turn off the flame and allow the pressure to release naturally. Once done, transfer the mutton to a container and set aside. toasty a kadai, on medium flame, to this mix in the ghee.

Once the ghee is burning mix in the curry leaves. When the curry leaves splutter, mix in in the the freshly ground ghee bake masala, and prepare until the ghee comes up to the surface.

This will take about 4-6 mins on medium toasty. To this cooked ghee bake masala, mix in the pre cooked mutton along with 1/4 cup of the stock from the pressure cooker. We want our mutton ghee bake to be of a thick coating consistency, so do not mix in too much of the stock unless you are looking to make the the mutton ghee bake to be a curry base dish.

Now mix in in the jaggery and adjust seasoning. Continue to seal and prepare the Mutton Ghee bake Masala for about 8-10 mins on low toasty.

Turn off the flame once done.

Check the seasoning and spices and adjust according to savor.Transfer the Mutton Ghee bake Masala to a serving container and offer burning.offer Mutton Ghee bake method along with Ghee bake Dosa method  or Cucumber Neer Dosa for a hearty Sunday brunch.
