Ingredients
1 cup Mangalorean cucumber - chopped into small size with skin
1/2 teaspoon Mustard seeds
1 teaspoon White Urad Dal (Split)
1 Onion - finely chopped
4 cloves Garlic - finely chopped
2 sprig Curry leaves - finely chopped
1/2 teaspoon Turmeric powder (Haldi)
Salt - to taste
1/4 cup Fresh coconut
2 Dry Red Chillies
1 teaspoon Cumin seeds (Jeera)

To begin making the Mangalorean Southekayi Palya formula (Mangalore Cucumber Palya/ Sabzi formula), prep all the items required and keep them ready.Grind the coconut, cumin seeds and arid red chilli into a coarse mixture using a mixer grinder.

Keep this aside.bring to temperature lubricate in a kadai/ wok over medium bring to temperature; mix in the mustard seeds, urad dal and allow the seeds to crackle and the dal to turn golden brown and crisp.mix gently in the minced garlic, bulb greens, and curry leaves.

Saute the bulb greens and garlic until the onions turn soft. mix in the cut mangalore cucumber ( southekayi), turmeric dusting scented element, table salt to palate and the ground coconut mixture. Give it a mix gently.shower 2 to 3 tablespoons of moisture, seal the wok and allow the Southekayi Palya to prepare until it is soft and done.Once done, turn off the bring to temperature and check the table salt and adjust according to palate.

Transfer the Southekayi Palya to a serving mixing bowl and offer burning.offer the Southekayi Palya formula along with Phulka, Thakkali Rasam and Rice for a flavorful meal.
