  • 2 cups Cabbage (Patta Gobi/ Muttaikose) - grated
  • 1/2 cup Gram flour (besan)
  • 1 Green Chilli - chopped
  • 2 tablespoons Coriander (Dhania) Leaves - chopped
  • 1/2 teaspoon Cumin powder (Jeera)
  • 1/2 teaspoon Red Chilli powder
  • 1/2 teaspoon Garam masala powder
  • 1 pinch Turmeric powder (Haldi)
  • 1/2 teaspoon Salt - to taste
  • 1 cup Sunflower Oil - for deep frying
  • 3 Tomatoes - large tomatoes
  • 1 tablespoon Ginger - made into paste
  • 1/2 cup Gram flour (besan)
  • 3 to 4 tablespoons Fresh cream
  • 2 tablespoons Curd (Dahi / Yogurt) - optional
  • 1-1/2 tablespoons Coriander Powder (Dhania)
  • 1 tablespoons Red Chilli powder
  • 1/2 teaspoon Turmeric powder (Haldi)
  • 1/2 teaspoon Cumin powder (Jeera)
  • 1/2 teaspoon Garam masala powder
  • 1 to 2 Bay leaf (tej patta)
  • 1/2 teaspoon Cardamom (Elaichi) Pods/Seeds - freshly crushed
  • Salt - to taste
  • Sunflower Oil - as required
  • 1 sprig Coriander (Dhania) Leaves - finely chopped

Instructions

To begin making the No bulb veggie No Garlic Cabbage Kofta Curry method, shred cabbage and press in batches to remove excess moisture.Collect the dehydrated grated cabbage in a large mixing mixing bowl.toss in besan, green chili, coriander, cumin dusting masala condiment, turmeric, garam masala, red chili dusting masala condiment and table salt.

mix gently well to make a dehydrated combine.mildly hot cooking oil in a kadhai/wok and meanwhile make medium lemon sized kofta balls out of the combine and keep aside in a plate.Once the cooking oil is burning, drop the kofta balls carefully in the wok.

Do not crowd the wok, toss in 4-5 at a time and shallow fry till golden in colour.Collect the fried kofta balls on a kitchen towel to absorb excess cooking oil.In a separate kadhai/wok, mildly hot cooking oil to make the curry.toss in bay leaf and within few seconds toss in grated ginger and saute.Now toss in besan and dehydrated-fry it for few seconds and immediately toss in the tomato puree in it and mix gently nicely.toss in coriander dusting masala condiment, red chilli dusting masala condiment, turmeric dusting masala condiment, cumin dusting masala condiment and garam masala dusting masala condiment and shallow fry the masala till cooking oil starts leaving from sides.Now toss in 2 tablespoons of curd (you can skip this step if you want) and shallow fry for another minute or so.Once the masala starts smelling good, toss in just-picked heavy cream and combine nicely.prepare for another 2-3 mins and then toss in moisture to make the curry.

The curry is thick hence be careful while adding moisture.Adjust table salt and let the curry come to a bring to a stew.stew the gas, toss in freshly crushed cardamom and prepare the curry for another 5 mins in low flame with lid closed.Once the curry is done, drop in the fried kofta balls and turn off the gas.Transfer the curry in a serving mixing bowl and toss in a swirl of just-picked heavy cream to finish off along with some just-picked coriander.enjoy No bulb veggie No Garlic Cabbage Kofta Curry with Pudina Tawa Paratha and Tomato bulb veggie Cucumber Raita for your palatable weekday meal.
