Ingredients

  • 3 Mango (Raw) - peeled and cut to 1 inch
  • 3 Byadagi Dried Chillies
  • 1 cup Fresh coconut - grated
  • 1/4 teaspoon Asafoetida (hing) - or Irani Asafoetida
  • 3 tablespoons Jaggery
  • 1 teaspoon Kashmiri Red Chilli Powder
  • Salt - to taste
  • Sunflower Oil - for roasting

Instructions

To begin making North Kanara sugary And tart Raw Mango Chutney method, prep all the items required first.In a small skillet, fiery up a half a teaspoon of cooking oil over medium fiery up and mix in the raw mango pieces.

Once done, transfer to the dish which mangoes were kept and keep aside.In the same skillet, mix in little more cooking oil and bake the byadgi chillies over medium fiery up for about a minute and turn off the fiery up.Once done, pulse all the roasted items required, along with jaggery, mango and table salt without adding moisture to make a sticky sugary and tart mango chutney.Check the seasoning levels and adjust the chilli and table salt accordingly.
