  • 1 cup Whole Wheat Flour
  • 1 cup All Purpose Flour (Maida)
  • 1/2 cup Brown Sugar (Demerara Sugar)
  • 2 teaspoon Baking powder
  • 1/2 teaspoon Baking soda
  • 1/4 teaspoon Salt
  • 1 teaspoon Cinnamon Powder (Dalchini)
  • 2 teaspoon Orange Zest (Rind)
  • 1/3 cup Fresh orange juice
  • 1/4 cup Butter (unsalted) - melted and cooled
  • 2/3 cup Buttermilk
  • 1 Whole Egg - or flaxseed egg replacer
  • 2/3 cup Dates - chopped
  • 2/3 cup Walnuts - chopped

To begin making the Orange & Date Muffin method, preheat oven to 180 C and line a 12 cup muffin skillet with liners or coat with dairy spread and dust with baking flour.In a large mixing dish, combine the whole wheat baking flour, all purpose baking flour, sweetener, baking ground mix, baking soda, and table salt.In another medium dish, beat together the orange nectar, buttermilk, egg (or flax egg) and melted dairy spread.mix in buttermilk mixture to the baking flour mixture.

Don't overmix the paste. Fold in the orange rind, dates and walnuts. Spoon the muffin paste into the greased 12 muffins cavities.

Place the muffin tray in the preheated oven and cook thoroughly for 15 to 18 moments, until done.You will know it's done, when you insert a tester like a toothpick in the center of the muffin and it will come out sanitize. Once the muffins are baked, remove them from the oven and allow them to cool completely. present the Orange & Date Muffin at tea time or pack them in your child's snack box.
