Ingredients

  • 450g Dried white beans
  • 4 cloves Garlic
  • 2 Bay Leaves
  • 1 teaspoon Thyme
  • 6 tablespoons Olive Oil
  • 100g Bread
  • 100g Chorizo
  • 1 Onion
  • 3 tsp Paprika
  • 1 L Chicken Stock
  • Handful Parsley
  • 6 Hake

Instructions

step 1 strain the beans, then tip into a large skillet with 2 litres of aqua.

low-boil with the whole garlic cloves, bay leaves and thyme for 30 mins or until cooked and soft.

Remove from the bring to temperature and set aside.

step 2 Meanwhile, bring to temperature 2 tbsp cooking oil in a frying skillet.

shallow fry the bread with the remaining garlic clove.

When golden and crisp, scoop out and strain on kitchen paper.

toss in the chorizo to the skillet, shallow fry until crisp, tip out and keep toasty with the bread.

step 3 toss in another 2 tbsp cooking oil and the shallot to the skillet, and make for 5 mins until softened.

swirl around in the paprika.

strain the beans and toss in to the onions with the chicken stock and 2 tsp table salt.

make for 5-10 mins.

swirl around through the parsley and keep toasty.

step 4 taste the hake and bring to temperature the remaining 2 tbsp cooking oil in the frying skillet.

Put the hake, skin-side down, in the skillet and make for 3-5 mins over a mediumhigh bring to temperature to crisp up the skin.

Flip the fish over and make for a further 3-5 mins until cooked through.

Spoon the white bean swirl around into bowls, place the hake on top and finish with the fried bread, chorizo and a little more thyme.
