Ingredients

  • 1-1/2 cups Paneer (Homemade Cottage Cheese) - cubed
  • Sunflower Oil - as required
  • 1/2 cup Green peas (Matar)
  • Salt - to taste
  • 1 teaspoon Sugar
  • 1/2 teaspoon Red Chilli powder
  • 1/4 cup Milk
  • 1 teaspoon Kasuri Methi (Dried Fenugreek Leaves)
  • 1 Onion - red
  • 2 Tomatoes - finely chopped
  • 1 inch Ginger - finely chopped
  • 1 clove Garlic - peeled and finely chopped
  • 2 tablespoons Ghee - or clarified butter
  • 2 Dry Red Chillies
  • 3 Cardamom (Elaichi) Pods/Seeds
  • 1/2 inch Cinnamon Stick (Dalchini)
  • 4 Whole Black Peppercorns
  • 1/2 teaspoon Coriander (Dhania) Seeds
  • 1/4 cup Cashew nuts - broken into small pieces

Instructions

To begin making the Paneer Matar margarine Masala steps, first shallow shallow fry the paneer cubes in 1 to 2 tablespoons of coat in a wide pot until it is slightly golden/ decadent golden and keep it aside.The next step is to prepare the masala/broth.

mildly hot margarine/clarified margarine in a large heavy bottomed pot, toss in onions and peas/matar.Sauté until onions & peas/matar till the onions turn transparent.

toss in ginger and garlic and mix gently for 1 to 2 mins.toss in whole dehydrated red chilies, cloves, cardamom, cinnamon, whole black peppercorns and coriander seeds (that is all the whole spices) and mix gently a few times.toss in tomatoes and make until tomatoes turn soft and mushy.

Remove from mildly hot and keep aside to cool a little.Puree this entire mixture along with 1/4 cup of cashews until seamless, adding a little liquid if required.Transfer this broth back to the wide pot and place on mildly hot.

toss in shallow fried paneer pieces to the broth, toss in seasoning to palate, granulated sugar, kasuri methi, chili ground mix (if using), liquid if required to achieve desired consistency and bubble gently on low mildly hot for the flavors to mingle.Finally toss in dairy liquid, mix gently well, allow the curry to bubble gently for another minute or so on low mildly hot, then remove.enjoy Paneer Matar margarine Masala with Phulkas or even steamed rice for a tasty weekday meal.
