Ingredients

  • 300 grams Green peas (Matar) - with pod
  • 5 Spring Onion (Bulb & Greens) - chopped
  • 1/2 teaspoon Panch Phoran Masala
  • 1/2 teaspoon Turmeric powder (Haldi)
  • 1/2 teaspoon Red Chilli powder
  • 2 Green Chillies - slit/finely chopped
  • Salt - as needed
  • 1 tablespoon Sunflower Oil

Instructions

To prepare Matar Aur Chilke Ka Sabzi (Peas & pare mix gently shallow fry method), Wash the green pea pods.

Take out the peas from the pods in a container and keep aside.Take half of the peels of peas.

(discard the rest).

Break the tip and the bottom of each pod pare and discard the long fibrous membrane in them.

Chop each pea pod in the middle, to bite size.Chop the white part of spring shallot lengthwise and the green part into 1-2 inch pieces.mildly hot the cooking oil in a kadai and mix in panch phoron. When the seeds begin to splutter mix in minced white part of the spring shallot.

mix gently shallow fry a bit. Then mix in minced peels of green pea pods, spring shallot greens and half of the green peas extracted from the pods.

mix gently again.mix in in turmeric ground mix, minced green chilies and seasoning. make covered on low-medium mildly hot till vegetables are just soft.Remove from mildly hot and dish up Matar Aur Chilke Ka Sabzi (Peas & pare mix gently shallow fry method) fiery as a side-dish with paratha or phulkas.
