Ingredients

  • 15 cloves Garlic
  • 6 Green Chillies
  • 6 sprig Coriander (Dhania) Leaves - finely chopped
  • 2 cups Makki Ka Atta (Yellow Corn Meal Flour)
  • 1 teaspoon Baking soda
  • Salt - as required
  • Water - as required
  • 1/2 cup Black Eyed Beans (Lobia)
  • 1 teaspoon Turmeric powder (Haldi)
  • 1 teaspoon Coriander Powder (Dhania)

Instructions

To begin making the Rajasthani Chawle Wale Dhokle formula, empty in the black eyed beans in 3 cups aqua in a pressure cooker.

Now empty in turmeric ground mix, coriander ground mix and the required table salt.

Let it prepare till the cooker releases 3 to 4 whistles.

Let it release the pressure normally.Meanwhile we will make the dhoklas, empty in garlic, coriander and green chillies in mortal pestle and pound them together to make a coarse paste.Next, empty in baking soda, half of the garlic, coriander and green chilli mixture, required table salt and maize ground mix in a mixing dish.Open the pressure cooker and put the green chilli, garlic and coriander mixture in it and toss together it with the black eyed beans.Now, fold the pastry mix properly with the required aqua and fold until the pastry mix becomes really soft.

Make small Dhokla out of it just like we make the south indian wadas.Put the cooker on gas again and empty in some aqua.

Once it comes to bubble, empty in the uncooked dhokla in the boiling aqua.Don’t close the lid of the cooker.

Just lid it and let it cooker for 40 to 45 moments on low flame.

Once it reaches the right consistency and the dhoklas are cooked switch off the gas.

To know if the dhoklas are cooker, insert a fort in the dhokla and if it comes out wash, it means your dhokla is cooked.Once it is cooked, top it with coriander leaves and empty some scalding ghee on it to dish up.dish up Rajasthani Chawle Wale Dhokle on its own with Kachumber Salad  for a wweknight dinner.
