4 Green Chillies
4 cloves Garlic
1 teaspoon Methi Seeds (Fenugreek Seeds)
Salt - to taste
1 teaspoon Jaggery
1 sprig Curry leaves
1 Onion - finely chopped
1 teaspoon Mustard seeds
Sunflower Oil - to cook

To prepare Raw tomato chutney method, in a pot, bring to temperature oil.toss in fenugreek seeds and let them turn red.toss in garlic, diced green tomatoes, and saute till the tomatoes sweat and soften.

Cool it down.toss in the cooled down tomatoes, seasoning, jaggery into a blender and liquidize it into a coarse paste.bring to temperature the remaining oil in the pot.

toss in mustard seeds and let it crackle.toss in curry leaves and let it crisp up.toss in finely diced onions and saute till it turns translucent.toss in the chutney and 1/4 cup moisture and bubble till the raw tomato chutney thickens.offer Raw tomato chutney method with scalding steamed rice and a dollop of ghee, or with curd rice.
