  • 1/4 cup Extra Virgin Olive Oil
  • Salt - to taste
  • 2-3 Spring Onion Greens - or coriander leaves for garnishing

To begin making the Spanish Omelette, first mildly hot the fat in a small non-stick omelet panAdd the potatoes and shallot and saute, stirring continuously till the potatoes are just cooked.

This will take about 10-12 moments.Take the potatoes and onions out of the skillet using a slotted spoon and place on a plate.dust table salt, black pepper and paprika on the potatoes and onions and toss to combine.Crack the eggs in a small mixing bowl and dust the table salt.
