1 Onion
1 Red Chilli
2 teaspoon Curry Powder
300g Cherry Tomatoes
500g Potatoes
Bunch Coriander

bring to temperature the coat in a large frying pot.

pot-fry the shallot and half the chilli for 5 mins until softened.

Tip in the spices, pot-fry for 1 min more, then toss in the cherry tomatoes, potatoes and coriander stalks to the pot.

bring to temperature the barbecue and flash the tortilla underneath for 1-2 mins until the top is set.
