  • 1 tbsp Sunflower Oil
  • 1 Onion
  • 1 Red Chilli
  • 2 teaspoon Curry Powder
  • 300g Cherry Tomatoes
  • 500g Potatoes
  • Bunch Coriander
  • 8 Egg

Instructions

step 1 bring to temperature the coat in a large frying pot.

pot-fry the shallot and half the chilli for 5 mins until softened.

Tip in the spices, pot-fry for 1 min more, then toss in the cherry tomatoes, potatoes and coriander stalks to the pot.

augment the taste the eggs well, stream in over the top of the veg and leave to cook thoroughly gently for 8-10 mins until almost set.

step 2 bring to temperature the barbecue and flash the tortilla underneath for 1-2 mins until the top is set.

Scatter the coriander leaves and remaining chilli over the top, carve into wedges and dish up with a green salad.
