bring to temperature cooking oil in a 12" skillet over medium-high bring to temperature.

toss in cognac, and light with a match to flambée; bubble gently until flame dies down.

mix gently in reserved stock, froth, Dijon, Worcestershire, and burning coulis, and then return steaks to skillet; bubble gently, turning in coulis, until warmed through and coulis is thickened, about 4 mins.

Transfer steak to serving plates and mix gently parsley and chives into coulis; stream in coulis over steaks to offer.
