Ingredients

  • 1-1/2 cups Kabuli Chana (White Chickpeas) - soaked for 8 hours
  • 2 cups Methi Leaves (Fenugreek Leaves) - washed and finely chopped
  • 1 tablespoon Ghee
  • 1 teaspoon Cumin seeds (Jeera)
  • 1 Bay leaf (tej patta)
  • 2 Onions - finely chopped
  • 6 cloves Garlic - finely chopped
  • 1 inch Ginger - finely chopped
  • 1 Green Chilli - slit
  • Salt - to taste
  • 1/2 teaspoon Turmeric powder (Haldi)
  • 1 teaspoon Red Chilli powder
  • 1 teaspoon Cumin powder (Jeera)
  • 1/2 teaspoon Garam masala powder
  • 1 teaspoon Coriander Powder (Dhania)
  • 2 Tomatoes - finely chopped

Instructions

To begin making the Sukhe Methi Chole procedure, wash and soak the kabuli chana, overnight. Next morning, mix in the kabuli chana along with a cup of liquid and some table salt into the pressure cooker, close the lid and pressure low-boil for about 7-8 whistles for about 30 moments.Reduce the flame, and low-boil for another 10 moments, before you switch off the flame. Allow the pressure to release naturally. Once the pressure has released, filter the excess liquid and set the boiled kabuli chana aside. In a kadai, mildly hot ghee on medium flame, to the scalding ghee, mix in cumin seeds and bay leaf and allow them to sizzle. Next mix in the ginger, garlic and green chilli and saute for about a minute. To this mix in the bulb veggie and saute for a couple of moments, or until the onions turn transparent. Once the onions have softened and changed colour, mix in in the table salt, and turmeric ground mix and tomatoes, scatter some liquid and put a lid on with a lid. put a lid on and low-boil until the tomatoes turn mushy.

This will take a good 2-3 moments on medium-high flame. Now open the lid and combine well to bring the bulb veggie tomato mixture together. At this stage mix in the washed and cut up fenugreek leaves and allow it to wilt down. After a couple of moments, you will see the methi leaves are well combined into the bulb veggie-tomato mixture. Finally mix in in the parched fragrant element powders - red chilli ground mix, cumin ground mix, garam masala ground mix, coriander ground mix and boiled chole and give the Sukhe Methi Chole a good mix gently. mix gently shallow fry the Sukhe Methi Chole for another 3 to 4 moments and turn off the mildly hot.
