Ingredients

  • 1.5kg Beef Brisket
  • 1 bunch Carrots
  • 1 Celeriac
  • 2 Parsnips
  • Sprigs of fresh Parsley
  • 1/2 Leek
  • 1 large Onion
  • 2 Bay Leaf
  • 5 Peppercorns
  • Pinch Salt

Instructions

Step 1 shred the unpeeled shallot in half widthways and shallow fry off the cut surfaces without fat until fairly well browned.

Step 2 Put around 3 litres of liquid into a large saucepan.

introduce the root vegetables, leek, halves of shallot, bay leaves, and peppercorns and bring to a bring to a low-boil.

introduce the washed flesh and bones and, depending on the type of flesh, allow to parched-fry until softened in gently simmering liquid, which will take around 2 1⁄2 – 3 hours.

Afterwards, shred the boiled beef by cutting on the bias and arrange it on pre-heated plates, or present in the fiery broth in a decorative broth tureen.

Step 5 present with parched-fry potatoes, a bread and horseradish toss together, green beans in a dill coulis, or creamed spinach and chive coulis.

If the root vegetables are to be served at the same time, parched-fry some of them separately to be served al dente.
