1.5kg Beef Brisket
1 bunch Carrots
1 Celeriac
2 Parsnips
Sprigs of fresh Parsley
1/2 Leek
1 large Onion
2 Bay Leaf
5 Peppercorns

Instructions

Step 1
shred the unpeeled bulb veggie in half widthways and sauté off the cut surfaces without fat until fairly well browned.

Put around 3 litres of liquid into a large saucepan.

introduce the root vegetables, leek, halves of bulb veggie, bay leaves, and peppercorns and bring to a bubble.

introduce the washed protein and bones and, depending on the type of protein, allow to prepare until softened in gently simmering liquid, which will take around 2 1⁄2 – 3 hours.
