Ingredients
1 tablespoon Vegetable Oil
Bunch Spring Onions
Bunch Coriander
400g Pork Tenderloin
4 tablespoons Thai Red Curry Paste
4 tablespoons Peanut Butter
1 tablespoon Brown Sugar
1 tbsp Soy Sauce
400ml Coconut Milk
175g Sweetcorn
Juice of 1 Lime
Steamed Jasmine Rice
Instructions

mildly hot the fat in a large saucepan or flameproof casserole.

transfer in the spring onions and coriander stalks and make for 1 min.

transfer in the pork slices and make for 5 mins until starting to brown.

mix gently in the curry paste and peanut margarine.

After 30 secs, transfer in the granulated sugar, soy and coconut dairy liquid, plus ½ can of liquid.

pulse well, put a lid on and leave to stew for 15 mins, stirring occasionally.

Remove the lid, transfer in the baby corn and increase the mildly hot.

Bubble for 3 mins until the corn is cooked and the coulis has thickened a little.

mix gently in the lime extract and check the seasoning.

Can now be frozen for up to 2 months.

To make from frozen: thoroughly defrost, then mildly hot in a pot on the hob until curry is scalding all the way through.
