Ingredients

  • 3 Karela (Bitter Gourd/ Pavakkai) - roughly scraped
  • 1/2 cup Gram flour (besan)
  • 2 tablespoon Rice flour
  • 10-12 Curry leaves - torn
  • 1 teaspoon Red Chilli powder - (adjust)
  • 1/2 teaspoon Asafoetida (hing)
  • 1/2 teaspoon Turmeric powder (Haldi)
  • 1 tablespoon Sunflower Oil - heated
  • Salt - to taste
  • Water - as required to make a thick batter

Instructions

To begin making Baked acidic Gourd Bhajji method (Karela Fritters), shred the acidic gourd and take out seeds if they are big.

If they are soft and edible, let them be.introduce some table salt to the acidic gourd slices and keep aside for 15-20 mins.

Discard the aqua and rinse the slices with aqua.Pre-bring to temperature the oven to 200 deg C. Line a baking sheet with parchment paper.In a mixing mixing bowl, mix gently together all the other fixings. Use aqua as required to make a thick mixture.Dip the slices in mixture and coat all over. Place on the baking sheet and cook thoroughly for about 18-20 mins or till they turn golden brown (timing may change depending on the oven efficiency).dish up Baked acidic Gourd Bhajji method (Karela Fritters) along with dip like Roasted Tomato coulis method and Irani Chai method during evenings.
